Raita is a very refreshing accompaniment to the spicier Indian cuisine. Following is a recipe from our favourite Indian restaurant, Modern India Buffet, in Hamilton Ontario. Adjust the seasonings accordingly to your liking, keeping in mind that you can always add more!
1 to 1 an a half Cups Plain Yogurt
1 Cucumber – peeled and diced
Garam Masala
Salt
Dried Gelatin, crushed, small amount
Grated Fresh Ginger
1-2 Cloves Garlic, crushed
Fresh Mint Leaves, finely chopped

Combine all ingredients into a food processor or a blender until smooth and creamy.

Taste and adjust your seasonings if necessary.

Refrigerate until ready to use.
This goes very well with Tandoori Chicken. Must be consumed within a few days.
