This recipe is a lighter version of an old classic, but if you love the dairy, go ahead and add some at the end. For those of you who want to be different, try using yellow, orange, or heirloom tomatoes for an-eye appealing and tasty twist.
18 French Baguette slices
2 Large ripe tomatoes, coarsely chopped
3 cloves of garlic, minced
1 Tbs. plus 1 tsp. extra virgin olive oil
2-3 Tbs. fresh basil, minced
Salt and pepper, to taste
- Preheat over to 275 degrees F

Combine all of the ingredients, except for the bread and 1 teaspoon of olive oil in a mixing bowl. Mix gently, cover, and set aside.

Brush the top of the baguette slices with the remaining olive oil. Place on a cookie sheet and bake for 5 minutes, or until golden, watching carefully that they do not burn.

Remove from oven and cover immediately with tomato mixture. Return to the oven for a minute, or two, just enough to warm them through and serve immediately.
