Mac & Cheese with some Mash

Yesterday, just shortly after posting my Cauliflower Mash recipe, I turned on Rachel Ray’s 30 Minute Meals, and what do I find her making? You guessed it – a cauliflower mash! Up to now, I have never seen anyone else do this, but she gave me a good idea.

Her mash was similar to mine, except instead of turnips, she used red onions. Good old Rachel added her mash to her pasta, which she then further enhanced with a number of other ingredients.

Here’s what I did instead – and my hubby loved it!

1 package of cooked pasta (use shells, elbows – whatever you like that will grab onto some sauce)

2 cups of Cauliflower Mash (see my blog post for this)

2 cloves garlic, crushed

1/2 cup shredded Jarlesberg

1/2 cup grated Parmesan cheese  (or more, if you like it really cheesy)

2 cooked Italian Sausages, diced

Pinch of chili flakes

Salt and Pepper

Bread crumbs

  1. Preheat oven to 350 degrees F
  2. Combine all of the ingredients except for the bread crumbs and 1/4 cup of cheese in a medium-sized baking dish – stir well to mix
  3. Sprinkle bread crumbs, then the remaining cheese, on top of casserol
  4. Bake uncovered for approximately 1 hour, or until the top is crispy
