This is an oh-so-easy-to-make dish that requires a moderate amount of prep work, but very little attention, and comes out perfectly every time!
1 medium onion, thinly sliced
2 stalks celery, thinly sliced
1 clove garlic, crushed
1 red bell pepper, diced
2 large boneless, skinless chicken breasts
1/4 cup chopped parsley
1 cup dark beer
1 Tablespoon honey
2 Tablespoons tamari sauce
2 Tablespoons freshly squeezed lemon juice
1 cup water
1/2 cup uncooked orzo pasta
2 generous pinches of saffron threads

Pre-heat oven to 350 degrees F.

In a large pan, saute the onion and garlic briefly in the lemon juice. Add the remaining ingredients, except for the chicken and parsley, and bring to a gentle boil.

Cut the chicken into strips. Arrange the chicken in a large baking dish and pour the pan mixture over it.

Cover and bake for 1 hour

Arrange equal portions of chicken slices on plates and spoon sauce over top and garnish with chopped parsley.
This elegant dish goes well with snow peas, green beans, or baby carrots.

This recipe came about because I was scrambling to throw together something interesting to eat for a very impromptu dinner party. I still can’t get over the results - and it’s so easy to make!
