Hearty, low fat soups are a tasty and heartwarming choice that you can prepare ahead of time. Make up some batches of your family’s favourites or try some new recipes in your new home. Following is a recipe that tastes great, but is so simple to make.
4 cups chicken broth
1 cup water
1 medium head cauliflower, cut into florets
2 -3 medium sweet potatoes, diced
4 whole cloves garlic, peeled
1 tsp. freshly ground ginger
1 tsp. savory
half tsp. curry powder
diced scallions for garnish
- Combine chicken stock, water, garlic and ginger in large pot and bring to a boil. Add remaining ingredients, cover and let simmer on medium low heat for 30 minutes, or until the cauliflower and sweet pototatoes are very soft.
- Remove from heat and let cool a bit. Puree until smooth. Return to pot and mix well over a low heat. Serve and garnish each bowl with diced scallions.
This recipe freezes well, so why not double it? You’ll have some on hand for a quick and nutrious meal that’s low in fat and high in vitamins and flavour.
