Cauliflower Sweet Potato Soup

Hearty, low fat soups are a tasty and heartwarming choice that you can prepare ahead of time. Make up some batches of your family’s favourites or try some new recipes in your new home. Following is a recipe that tastes great, but is so simple to make.

4 cups chicken broth

1 cup water

1 medium head cauliflower, cut into florets

2 -3 medium sweet potatoes, diced

4 whole cloves garlic, peeled

1 tsp. freshly ground ginger

1 tsp. savory

half tsp. curry powder

diced scallions for garnish

  1. Combine chicken stock, water, garlic and ginger in large pot and bring to a boil. Add remaining ingredients, cover and let simmer on medium low heat for 30 minutes, or until the cauliflower and sweet pototatoes are very soft.
  2. Remove from heat and let cool a bit. Puree until smooth. Return to pot and mix well over a low heat. Serve and garnish each bowl with diced scallions.

This recipe freezes well, so why not double it? You’ll have some on hand for a quick and nutrious meal that’s low in fat and high in vitamins and flavour.
