Cauliflower Mash

Are you ready for the easiest recipe ever? You won’t believe it ’till you try it. When you prepare cauliflower this way (with turnips of all things – the small white and purple kind), it comes out tasting surprisingly like mashed potatoes. You can probably even fool the kids!

1 head cauliflower, cut into florets

3 small turnips (the white and pale purple kind), peeled and cubed

pinch of salt

water

  1.  In a large pot, bring the salted water to a boil
  2. Add the vegetables and reduce the heat to medium low. Cover and cook until tender (approximately 30 minutes).
  3. Strain and reserve the cooking water (you can use this for soup stock). In the same pot, or large bowl, mash the cauliflower and turnip pieces until smooth.
  4. Serve immediately!

Great on it’s own, but even better with mushroom gravy or a light cheese sauce.

    Serve this cauliflower mash any place you would mashed potatoes.This is an excellent way to get some very healthy, yet not so appealing, veggies incorporated into you menu.
